GINGER MILK

GINGER MILK

  • 3/4 teaspoon of dry ginger powder
  • 3 teaspoons of coconut sugar
  • few pinches of powdered cardamom 
  • few pinches of fennel powder 
  • 1 cup of any milk
  1. Mix, boil and give a nice stir.
  2. Strain and enjoy hot with snacks.

CARROT SOUP WITH GINGER & TURMERIC

 

  • 500g (1 lb) carrots, grated
  • 3 teaspoons of olive oil, or oil of your choice
  • 1 small onion, chopped
  • 3 cloves of garlic, roughly chopped
  • 1 tablespoon of ginger powder (or grated fresh ginger)
  • 1 teaspoon of turmeric powder (or grated fresh turmeric)
  • 1/4 teaspoon of black pepper
  • 1/2 teaspoon of salt
  • 1L hot vegetable stock
  1. Peel and grate the carrot, chop the onions and garlic
  2. Saute the onions over medium heat in a pan with 3 tbsp of oil. Once they are translucent and soft add the garlic, ginger, turmeric. carrots and seasoning.
  3. Saute everything for another 2-3 minutes over medium heat.
  4. Add the hot vegetable stock, bring to a boil and simmer for 5 minutes.
  5. Puree the soup with an immersion blender or use a free standing blender and do it in batches.
  6. Serve with some toasted pumpkin seeds, red pepper flakes and fresh coriander if you want.
